Donuts with berry jam
For donuts:
Ingredients
1.5 cups almond flour
1/2 cup coconut flour
1 tablespoon baking powder
2 tablespoons vanilla pudding vanilla powder
2 eggs
3 cups Noam cheese 28%
2 spoons Cream cheese 25% or more cream cheese
2 tablespoons butter
¼ a teaspoon of liquid sucrose
Soft butter to spread
Sugar substitute powder for dispersal
For berry jam:
1 bag of frozen berries without cherries
1/2 cup erythritol
1/4 teaspoon xanthan gum
A little squeezed lemon
Preparation
Preheat oven to 175 degrees
Line an oven pan with baking paper
For donuts:
In a food processor, mix the almond flour, coconut flour, vanilla pudding powder and baking powder.
2. Add the eggs and mix well
Melt the cheeses and butter in the microwave for 60 seconds
Remove, mix with a fork and return for another 30 seconds
5. Transfer to the food processor and mix until you get a dough that is comfortable to work with
(If the dough is too soft, add more almond flour)
6. Leave in the food processor for about 15 minutes
7. Cut between 8-12 balls and place on the baking paper
Brush with melted butter in the microwave
9. Bake for about 20 minutes
Sprinkle with sweetening powder
Berry jam:
In a small saucepan over medium heat, cook the fruit
2. Add the erythritol
Grind in a manual blender or small food processor
Return to the pot, heat and add the xanthan gum and lemon
Transfer to jars and refrigerate for at least 4 hours
