Chocolate balls for big kids

Ingredients

For cookies:

100 grams of almond flour
80 grams of soft butter
30 g erythritol or 1/4 teaspoon liquid sucrose yellow stopper
1 medium-sized egg
½ teaspoon vanilla extract

For the chocolate sauce:

100 grams of chocolate 85% or more (preferably Lubka chocolate circles)

1/2 cup 38% sweet cream

2 tablespoons of alcohol to choose from that is allowed in the diet (rum, brandy, whiskey) - not mandatory !!

For chocolate decoration
50 grams of 85% or more chocolate

Natural ground coconut

Preparation

1. Preheat oven to 180 °
In a food processor, mix all the ingredients for making the cookies
3. Cut balls 3 cm in diameter, place on baking paper and bake for about 20 minutes
4. Remove, cool and mash to crumbs

5. In a small pot, heat the sweet cream but do not boil

6. Remove from the heat and pour over the chocolate and melt into the ganache

7. Add the melted chocolate to the cookie mixture

Mix well (you can use a food processor)

Refrigerate for 20 minutes

10 form balls 3 cm in diameter

For decoration:

Melt the chocolate on a steam bath and pour over the ball

Sprinkle with ground coconut

Refrigerate

Serve cold
